Galletitas de otoño / Autumn cookies

Siempre que uso  queso ricotta para alguna receta me sobra bastante y en ocasiones se me pierde. Así que esta vez encontré esta receta en allrecipes.com. Se las voy a incluir con los cambios que le hice porque  o no tenía los ingredientes completos, o quise hacerla más saludable. 



Ingredientes

  • 1 taza azúcar blanca
  • 1 taza azúcar turbinada
  • 1 taza mantequilla, ablandada
  • 15 onzas de queso ricotta (en mi caso usé como 10 onzas de ricotta y 5 oz de queso cottage (sin el líquido)   
  • 2 cucharaditas de extracto de vainilla 
  • 2 huevos
  • 2 tazas de harina de todo uso
  • 2 tazas de harina integral
  • 2 cucharadas de baking powder
  • 1 cucharadita de sal
  • 1 1/2 tazas de  azúcar de confitería
  • 1 1/2 cucharadas de jugo de limón
  • 1 1/2 cucharadas de leche

Instrucciones:

  1. Precaliente el horno a  350 grados F (175 grados C). Cubra las bandejas donde va a hornear las galletas con papel pergamino ("parchment paper"). 
  2. En un envase grande, con la mezcladora a una velocidad baja (yo lo hice a mano), bata el azúcar y la mantequilla hasta que se combine.  Aumente a una velocidad alta y bata hasta que quede mullido ("fluffy") (eso toma alrededor de 5 minutos). Reduzca a  velocidad mediana y añada el ricotta/cottage, la vainilla y los huevos.  
  3. Reduzca a una velocidad baja. Añada la harina, el polvo de hornear, la sal y bata hasta que se forme  la masa.  
  4. Ponga la masa en forma de bolitas en la bandeja de hornear a dos pulgadas de distancia de cada una.  Hornee a 350 grados F (175 grados C) por 15 minutos dice la receta, pero a mi gusto le di de 25 a 30 minutos hasta que estuvieran bien doraditas.  Remueva las galletas con una espátula a la rejilla de metal para que se enfríen. 
  5. Cuando las galletas se enfríen, prepare el glaseado.  En un envase hondo pequeño  revuelva el azúcar de confitería con el jugo de limón  y la leche.   Con una espátula pequeña, unte el glaseado en las galletas; rocíe con "sprinkles" de colores.

Nota: estas galletas tienen una consistencia de bizcocho, no espere tener unas galletas completamente tostaditas como unas chocolate chips. Aqui le llamamos galletas bizcochudas.

Whenever I use ricotta cheese on  a recipe, I always have a lot of leftovers and sometimes I lose it in the fridge.   So this time I found this recipe on allrecipes.com. which I include  with the changes that I made because I did not have all the ingredients or because I wanted to make it healthier.  


Ingredients

  • 1 cup  white sugar
  • 1 cup turbinado sugar
  • 1 cup butter, softened
  • 15 ounces ricotta cheese (in my case I used about 10 oz. ricotta and 5 oz. cottage cheese without the liquid)
  • 2 teaspoons vanilla extract
  • 2 eggs
  • 2  cups all-purpose flour
  • 2 cups wheat flour
  • 2 tablespoons baking powder
  • 1 teaspoon salt
  • 1 1/2 cups confectioners' sugar
  • 1 1/2  tablespoons milk
  • 1 1/2 tablespoons lemon juice or extract

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Line baking sheets with parchment paper.
  2. In a large bow, with the mixer a low speed, beat the sugar and butter until combined. Increase speed to high and beat until light and fluffy (about 5 minutes). Reduce speed to medium and beat in the ricotta/cottage, vanilla and eggs.
  3. Reduce speed to low. Add flours, baking powder and salt; beat until dough forms.
  4. Drop dough by level tablespoons, about 2 inches apart; onto the prepared baking sheets. Bake at 350 degrees F (175 degrees C) for about 15 minutes (for me it work out better to leave them from 25 to 30 minutes)  or until cookies are very lightly golden (cookies will be soft). With spatula, remove cookies to wire rack to cool.
  5. When cookies are cool, prepare icing. In small bowl, stir confectioners' sugar, lemon juice or extract,  and milk until smooth. With small spreader, spread icing on cookies;  sprinkle with colored sugar or candy sprinkles.

Recogiendo dulces / Halloween

Este es el grupo de locos que llevamos a buscar dulces ayer 31 de octubre. Es una nueva experiencia para nosotros el buscar dulces de tienda en tienda en la Ditmars Blvd. en NY. Mis hijos, los Shadow Troopers, lo gozaron mucho junto a sus primos (el fantasma y Miss Candy Corn, que no salió en la foto). ¡El de la nariz de payaso es el abuelo (mi papá) que se lo gozó más que los nenes y hasta le dieron dulces!


Los demás no salimos en las fotos porque usamos nuestro disfraz de uso diario y ¡temía que se pudieran espantar al vernos!


La tarde estuvo fría y con viento, pero esto no opacó lo mucho que nos divertimos viendo a cientos de familias disfrazadas de todo tipo de personajes y artefactos como ipods y zafacones (cestos de basura). Esta es una de las ocasiones favoritas de mis hijos porque ellos se pasan  disfrazados en la casa y esta es la oportunidad para 'legalmente' salir a la calle con los disfraces.

Así que compré  dos por el precio de uno, o si queremos ponerlo de otra manera, compré los disfraces al precio que me compraban los míos en Woolworth en los años 80. ¿Se acuerdan que venían en cajas?


Ahora, ¡a comer dulces por el resto de la semana!

ENGLISH VERSION

This is the group of crazy people that we took out yesterday on Halloween. It is a new experience for us to go from store to store to look for candy in the Ditmars Boulevard in NY. My children, the Shadow Troopers, enjoyed it a lot with their cousins (the ghost and Miss Candy Corn, who is missing in the picture). ¡The one with the clown's nose is their grandfather (my dad) who enjoyed it more than the kids and even got candy!

The afternoon was cold and windy, but this does not overshadow how much fun we had watching hundreds of families dressed in all sorts of characters and gadgets like ipods and garbage cans. After Christmas, this is the their favorite 'celebration' because they spend the rest of the year dressed up at home, and this is their opportunity to 'legally' go out with their costumes.

So I bought two for the price of one, or if we want to put it in another way, I bought the costumes at the price I bought mine at Woolworth's in the 80's! Do you remember that they came in boxes? 

We will be eating candies for the rest of the week!
