
Usé la receta de Joanny de La Hogaza. Le hice una variación: usé sólo harina blanca, no porque no quisiera usarla, sino que por desesperada usé la que tenía a mano para no tener que salir al mercado en un día lluvioso. Mañana voy a comprar la harina integral para hacerla 'al pie de la letra'.
Receta de Pan básico Integral
1 1/2 taza harina blanca (sin blanquear)
1 1/2 taza harina integral
1 cda levadura seca activada (activada según las instrucciones del paquete)
1 1/4 taza agua
1 1/2 cda miel o agave
1 1/2 cda aceite vegetal
1 cdta sal
Procedimiento:
- En un envase mezclar los ingredientes en el siguiente orden: las harinas, levadura, sal, aceite, miel o agave y el agua.
- Mezcle con una cuchara volteando de abajo hacia arriba hasta unir toda la masa. Seguir amasando con las manos hasta unir bien toda la masa.
- Colocar la masa en una superficie enharinada y amasar de 10 a 15 minutos hasta conseguir una masa elástica y suave. Añada harina poco a poco cuando sea necesario. Si usa batidora (aclaro: batidora de cocinar, no la de hacer batidas) debe batir 5 minutos en la primera velocidad y 5 minutos en la segunda velocidad. Aquí puedes aprender a amasar la harina en texto o video.
- Colocar en un envase hondo y cubrirlo con tapa o papel de plástico ("plastic wrap"), o una toalla de cocina. Dejar levar hasta que doble el tamaño. Esto puede tomar de 30 a 90 minutos.
- Sacar la masa del envase, dividir en las porciones deseadas y darle forma a la masa (en molde, hogaza, bollitos, etc.). Cortar y dejar levar por 40 minutos.
- Hornear en horno precalentado a 375 F de 25 a 30 minutos hasta que se dore. Remover del molde y poner en rejillas para enfriar. Nunca sobre superficie plana.

How exciting! I wanted to try this recipe for a long time, but had not had the chance. I really enjoyed the process and the bread is delicious. As soon as it came out of the oven, I cut a slice, I spread some butter and ate it. Hummmm!!

I made a variation: I used only white flour, not because I did not want to use it, but because I was so desperate to try the recipe that I used what I had on hand and did not want to go the grocery store on a rainy day. Tomorrow I will buy the whole-wheat flour to make it 'to the letter'.
Basic Whole-Grain Bread
1 1/2 cup white flour (unbleached)
1 1/2 cup whole-grain flour
1 Tbs dry activated yeast (activate it following the instructions on the package)
1 1/4 cup water
1 1/2 Tbs honey or agave syrup
1 1/2 Tbs vegetable oil
1 tspn salt
- In a mixing bowl mix the ingredients in the following order: flour, yeast, salt, oil, honey or agave and water.
- Mix with a spoon turning bottom up until all the dough together. Continue to knead with hands until all the dough mix well.
- Place dough on a floured surface and knead 10 to 15 minutes until a smooth elastic dough. Add flour slowly as needed. If using blender (clarified: cooking mixer, not to raids) should beat 5 minutes at first speed and 5 minutes into the second speed. Here you can learn to knead the flour in text or video.
- Place in a bowl and cover with lid or plastic wrap (plastic wrap), or a kitchen towel. Let rise until double in size. This may take 30 to 90 minutes.
- Remove the dough from the container, divide into desired portions and shape the dough (in the mold, loaf, buns, etc.). Cut and let rise for 40 minutes.
- Bake in preheated oven at 375 F for 25 to 30 minutes until golden. Remove from pan and place on racks to cool. Never on a flat surface.
